Jajo ptasie zawiera wszystkie niezbędne składniki odżywcze i czynniki wzrostu potrzebne do prawidłowego rozwoju zarodka, w tym także przeciwciała, które są transportowane z krwi kury do żółtka jaja w celu zapewnienia odporności świeżo wyklutemu pisklęciu. Głównym przeciwciałem zapewniającym odporność u ptaków jest immunoglobulina Y (IgY), która jest także głównym przeciwciałem występującym u gadów, płazów i ryb płucodysznych odgrywając podobną rolę biologiczną jak ludzkie przeciwciała IgG o czym wspominaliśmy w pierwszej części pracy poświęconej przeciwciałom IgY.
